A welcoming coffee stop; a retreat from the crowd for lunch or a glass of champagne over supper with friends, the brief for one of Galways historic hotels was not only to update but to attract a younger crowd. Whilst continuing to honour its tradition, the end result for one of Galway’s historic hotels was one of complete success.
